Steps to successful cakes 1) Read the recipe entirely beforehand. Assembles all the ingredients and equipment before proceeding. 2) Preheat oven to correct temperature, prepare baking tins. 3) Don't allow room temperature ingredients such as butter and eggs to get too warm. 4) Measure ingredients accurately; do not judge quantities by eye but use standard metric measuring cups and spoon. 5) Presift dry ingredients. 6) Ensure correct creaming of butter and sugar mixtures; add eggs or egg yolks gradually. 7) Don't overbeat egg whites. 8) Take care with folding in procedures. 9) Spoon or pour cake mixture into prepared cake tin, spread evenly into corners and smooth surface. 10) Check oven temperature; avoid opening oven door until at least two thirds of the way through baking. 11) Times given for cakes are approximate; the cooking time can vary according to the accuracy of the oven temperature and where the cake is placed. 12) Stand cake in tin for specified time before turning to wire rack to cool.
